Sunday Supper: "It's Buffalo Chicken Dip!"

Okay, if you saw my blooper real over the last week, you would get why that title is in quotes. Well, I thought I would post it here anyway! 

AHHH, I absolutely LOVE this week's easy peasy recipe that will make your #sundayfunday football fanatics want MORE! Honestly, you can make this for any occasion but it is HOT, chock full of protein, did I mention easy, and is a much healthier alternative to classic dips.

Super simple, super easy, super "Janine loves everything about it!" It can be made one day in advance and, if you do not feel like cooking bland old chicken breasts in the oven, or want to wait for that matter, throw it in the slow cooker on low for 4-6 hours. I am a fan of this method (I can use my own chicken) OR pull from a rotisserie chicken. Just make sure to grab one that is not injected with a whole lot of junk. Ideally, shredded chicken works best but, if not an option, and you do need to pop in the oven, just make sure to thinly slice it.

Buffalo Chicken Dip

(Adapted from Living Loving Paleo)
Ingredients
  • 3 cups cooked chicken breast; preferably shredded
  • 1 cup mayonnaise; I used Sir Kensington's but Primal Kitchen is another one of my favorites!
Sir Kensington's Mayo

 

  • 1/2 cup of your favorite hot sauce (I love Hank Sauce)
  • 1 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 3/4 tsp. sea salt
  • 1/4 tsp. black pepper

Directions

  • Preheat oven to 350 degrees. As it is heating, combine all ingredients in a medium sized mixing bowl. Mix well.
  • Pour, and spread evenly, in an 8x8 baking dish or a round one as I used from Anthropologie

  • Bake uncovered for 30-35 minutes until browned and bubbling.
  • Serve, immediately, and pair with what is Fit4You! Crudites are my go-to!
