Okay, if you saw my blooper real over the last week, you would get why that title is in quotes. Well, I thought I would post it here anyway!
AHHH, I absolutely LOVE this week's easy peasy recipe that will make your #sundayfunday football fanatics want MORE! Honestly, you can make this for any occasion but it is HOT, chock full of protein, did I mention easy, and is a much healthier alternative to classic dips.
Super simple, super easy, super "Janine loves everything about it!" It can be made one day in advance and, if you do not feel like cooking bland old chicken breasts in the oven, or want to wait for that matter, throw it in the slow cooker on low for 4-6 hours. I am a fan of this method (I can use my own chicken) OR pull from a rotisserie chicken. Just make sure to grab one that is not injected with a whole lot of junk. Ideally, shredded chicken works best but, if not an option, and you do need to pop in the oven, just make sure to thinly slice it.
Real quick, I want to give a shout-out to my go-to company for purchased various proteins - Butcher Box. Every 2 months, I receive a customized box filled with all of my favorites - from chicken and pork, to beef and fish. My most recent box included an "add on" 18lb. free range turkey that is super impressive. Their products are all natural, no added antibiotics or steroids, and NO JUNK. Love it! And, the best part, it is a simple click, and voila, it is shipped right to your door. I could not be happier AND, because of that, I am giving you THIS CODE so you can get $30 off your 1st order! Yes, $30 off baby! Simple enter this code at checkout - http://fbuy.me/n-twQ
Oh, and one more shameless plug! Are you ready? Because you need to get it while it is "HOT!" Many different hot sauces out on the market but this one is a family favorite!
Hank Sauce, based in New Jersey, is family owned and operated AND one of the partners is a dear friend of our family. Now, I will not be able to do their story justice - in a nut shell, they met in college, 2 of the 3 were not fans of hot sauce, so they started whipping up their own. See, told you; bad at this story telling. Check out the website; you will get ALL THE DETAILS.
Alright, I know I am hungry...are you? Let's get cooking!
Enjoy! Oh, and serve with chips, pita or crudites - yes, I am fancy like that!
Buffalo Chicken Dip
(Adapted from Living Loving Paleo)
- 3 cups cooked chicken breast; preferably shredded
- 1 cup mayonnaise; I used Sir Kensington's but Primal Kitchen is another one of my favorites!
- 1/2 cup of your favorite hot sauce (I love Hank Sauce)
- 1 tsp. garlic powder
- 1/2 tsp. onion powder
- 3/4 tsp. sea salt
- 1/4 tsp. black pepper
- Preheat oven to 350 degrees. As it is heating, combine all ingredients in a medium sized mixing bowl. Mix well.
- Pour, and spread evenly, in an 8x8 baking dish or a round one as I used from Anthropologie
- Bake uncovered for 30-35 minutes until browned and bubbling.
- Serve, immediately, and pair with what is Fit4You! Crudites are my go-to!
